Persian Bread

Types of Persian Breads

The ovens were originally made of clay. In this way, they made cylinders with peripheral mud and lit fires at the bottom. After heating the pan, the bread dough was glued around it and they waited for it to be baked.
There were clay ovens in the kitchens of the houses. These ovens were either raised surfaces of mud or dug into the ground.
The clay oven is the stage after the clay oven. This oven is not much different from a clay oven.
The gas oven is made of metal and is heated by gas. Its advantage over previous ovens is that it is smokeless and portable.
The ovens we mentioned were in addition to the bakeries in the homes of most Iranians. These days, except in the villages and a few cities, there is no oven in the houses.
More advanced ovens used in bakeries today have a high-temperature plate on which bread is placed on a plate, rotated on it to bake.

How to make Persian Bread

Watching the process of baking Iranian bread is one of the experiences that Iran Travel offers to tourists. The beauty of Iranian bakeries is that you can watch all or most of the baking process while you wait for your bread to be ready. All these steps were already done by hand. In many cities today, industrial methods are used for many of these steps. These steps are as follows:

First, the bread dough is prepared.
Then someone makes the bread into a sphere. In Iran, this is called "bargaining". The person in charge of this task should know how much dough he should take to get the bread to the desired size, and in addition, he should try to have all his chins the same size.
Another person smoothes the chin with a rolling pin. And sesame or other ingredients are poured on it. He spreads it on a pillow or a wooden plate and, depending on the type of oven, he attaches it to the wall of the oven or spreads it on a revolving plate.
Another person throws the prepared bread on the customers table.
